Honey Cornflakes (Cornflakes Madu) - Super Easy Recipe!!
Over the recent Sunday, I had to do some more baking and I chose to bake Honey Cornflakes. These are super easy to prep and bake. Good news for those ladies who like to do last minute baking or for those who may not even like to bake but would like to contribute something for party treats.
My mother used to bake these and they tasted good. My mother never writes down her recipes. She used to remember everything by heart. As time passed by though, she had begun to forget (along with some of her other great recipes) how much honey i should add for this recipe. If you don't add sufficient honey, your cornflakes will not bind. So, she happily pours in her honey without qualms. Whenever she is in front of the stove especially, all she does is grab and throw her ingredients in the pot or mixing bowl. Almost all the time though, the food she prepared tastes like they are cooked or baked by a professional chef!! Whereas for me , it is only until I know for sure how much honey I should let my cornflakes dip in, I'd rather stay away from diabetes!
Honey cornflakes taste real good. I remembered, they were the first to be cleared off its container once the kids laid their hands on them. You can't really go wrong with this recipe. The only wrong thing that can happen is if and when your kids (their daddies included) had finished them off even before your guests could have them!
Anyway, back to the honey cornflakes, I wanted mine to turn out just right. I decided to do some hunting on the net for the recipe. I found one from here. This site has many great recipes that you can try. You can check it out!
Again, since I am preparing these for Hari Raya (for those of you who don't know - Hari Raya, a Malay word actually means "day of celebration" also known as Aidilfitri or Eid-ul-Fitr (Arabic), which is the day where Muslims celebrate the arrival of the month of Syawal after a successful month of fasting in Ramadhan), I have actually made adjustments to the recipe. The ingredients below managed to bake about 300 mini cups and I gave half of that to my mother. Now that I have an oven, I can save my mum the hassle of baking!
10 tbsp honey
250 grams butter (the original recipe uses unsalted butter but I like mine salted)
750 grams cornflakes (gently crushed to smaller pieces)
Coloured Sprinkles (for topping)
1. Heat up the saucepan. (I used a pot! :p)
2. Melt the butter and honey over gentle heat stirring every now and then until the mixture bubbles!
3. Pour in the cornflakes into the honey butter mixture and stir thoroughly so that the cornflakes get coated evenly.
4. Preheat your oven at 150 degrees celsius.
5. Spoon the cornflakes into individual mini baking cups or cases.
6. Top the cornflakes with coloured sprinkles or any topping of your choice.
7. Bake for ten minutes.
The cornflakes will bind together once cooled off.

I will try my best to upload more recipes of Hari Raya goodies though my hands are quite full with a 5 year old, a toddler and a baby. Sometimes it takes a lot of effort to and patience when I start working on the lappy to post my entries. Focus is a taboo in my home for at least a few more years.
